Reindeer Quiche




The other night I had my Finnish friend over for dinner and I made this quiche. She is also from Lapland so I thought it would be nice to eat something nordic. And what could be more nordic than reindeer?

REINDEER QUICHE

1 ready pastry dough with butter

Filling:
200 g zucchini 
200 g smoked reindeer
3 eggs
150 ml milk
hint of salt and black pepper
200 g grated cheese (asiago/edam/mild cheddar)

Preheat oven to 225 C.
Prepare a spring cake tin covering it with baking paper and place the pastry dough in the tin. Even better if you find the ready shaped version in which the baking paper comes together with the dough, it's so easy to use (here in Italy they sell only those).
Chop zucchini and reindeer meat into cubes and add them on the bottom. 
Mix together eggs, milk, salt and pepper and pour on top. Cover everything with grated cheese and bake in the oven for 20-25 minutes.
Remove from the oven and serve with salad and nice glass of wine.
