Ham & Cheese Pasties



Back in Milan, already feeling a bit homesick, I wanted to make Finnish potato pasties.
I decided to modify the recipe so I added ham and cheese. Also the whole wheat base is thicker and more filling than usual. 

HAM & CHEESE PASTIES

Dough:

200 ml water (42 C)
350 g (5dl) whole wheat flour
1 bag of dry yeast 
1 teaspoon salt
1 teaspoon sugar
50 ml olive oil (or other, like canola oil)

Filling:

75 g potato flakes
200 ml milk
200 ml water
50 g butter
150 g ham
150 g emmental

For the dough mix together in a bowl flour, dry yeast, salt and sugar. Mixing with a kitchen spoon add warmed water and oil. In the end use your hands and add flour if the dough is too sticky. Cover the bowl with a towel and leave it in a warm place for an hour.



Prepare the filling warming milk and water and mixing it with potato flakes. Add melted butter and wait until turns into solid puree. Mix puree together with chopped ham and grated emmental.




Preheat oven to 225 C.
Place the dough on a clean floured surface and cut the dough in 12 pieces. Using a rolling pin make flat round bases, add the filling in the middle and pinch the borders together with your fingertips.




Bake in the middle of the oven for about 20 minutes until  the pasties turn golden brown. 
Serve together with a nice salad :)
