Salty Tapas Mini-Pies



Spanish Tapas are like Antipasti in Italy. I have always had a problem with these little things because many times I prefer them more than the actual meal. Because of this I sometimes prepare the whole dinner based on different starters. 

Last week my parents were on holiday in Andalucia and they brought us some delicious ingredients.
I came up with these small pies for our Tapas night. 

SALTY TAPAS MINI-PIES (about 10 pieces)

Base:

250 ml white flour
200 g instant potato puree
1 teaspoon salt
1 teaspoon brown sugar
100 g butter (room temperature)

Filling:

150 g Spanish sausage (for example Lomo)
2 eggs
200 ml milk
hint of salt, pepper and sweet paprika
250 g cherry tomatoes
200 g strong Spanish cheese (like Manchego)

Preheat the oven to 175 C.

For the base add all the ingredients in a bowl and mix together with a kitchen spoon. In the end you can use your hands, add flour if needed.



Grease small pie tins with butter and add some flour on them. Divide the dough and press it on every tin making sure to cover also the borders.



For the filling chop the sausage into small thin bites and place onto pie tins. Mix together eggs, milk and spices and pour on the sausage. Add the sliced cherry tomatoes and finish with grated cheese.


Bake in the middle of the oven for 15 minutes until the pies turn golden. 
Serve with other tapas like marinated olives, potato omelet, fresh salad and tasty Spanish red wine!!
