Peach Raspberry Oatmeal Cake




Oatmeal has lately become one of my favourite things. For years I didn't eat it because it reminded me of some boring porridge at kindergarden. 
But now the taste of it feels nice and gives me comfort. 
So I put the idea in this cake, it is perfect for breakfast :)

PEACH RASPBERRY OATMEAL CAKE

Base:
2 eggs
45 g (0,5 dl) brown sugar
250 g (4 dl) oatmeal
2 teaspoons baking powder
2 teaspoons vanilla sugar
150 ml milk (soya or  normal)
3 medium peaches cut into little cubes

Topping:
200 g raspberry jam

+ icing sugar

Preheat the oven to 200 C.
Prepare a spring cake tin buttering it all over.
Cut the peaches into small cubes. 
In a bowl whisk the eggs with sugar, then add oatmeal, baking powder, vanilla sugar and milk. Last add the peach cubes and mix carefully. Pour the mix into the cake tin and spread raspberry jam all over the surface.
Place the tin in the oven and bake for 20-30 minutes.
Let the cake cool for a couple of minutes, spread some icing sugar on top and enjoy!!
