Sesame Snack Balls



Make your friends and colleagues happy with these snacks :)))

SESAME SNACK BALLS

200 g sesame seeds
300 g integral biscuits
250 g almond milk spread
2 tablespoons honey

Crush the biscuits with a knife or an electronic mixer. Warm the almond milk spread and add it together with all the other ingredients in a big bowl and mix carefully. If the texture is too dry, add some normal of soya milk. 
Start making balls of the size you prefer (I made medium ones) and place them in the paper liners. Place in the fridge for a while and serve :)

Daim Tårta



This is not the Daim cake that you find at Ikea. It's so much better!!
My Mom taught me the recipe so it's even more important to me. 
Plus it's super easy to make :)

DAIM TÅRTA

Base:

2 eggs 
145 g (2 dl) sugar
1 teaspoon baking powder
150 g hazelnut flour 

Topping:

250 ml cream
2 tablespoons sugar
2 teaspoons vanilla sugar
100-120 g Daim crushed

Preheat the oven to 175 C. Prepare a spring cake tin covering it with baking paper. In a bowl whip the eggs with sugar into a fluffy foam. Mix the baking powder together with hazelnut flour and add in the first bowl still mixing carefully. Pour into the cake tin and bake in the oven for 20-25 minutes.
Let cool. 
Prepare the topping whipping the cream into a hard foam. With the help of a sharp knife crush Daim and mix it plus both sugars with cream. 
Remove the collar of the cake tin and place the cake on a serving plate.
Spread topping generously on the cake and place in the fridge until served. 







Home Made Muesli

A great suggestion for a healthy breakfast :)
I know there are many ready muesli's available at the supermarkets but I prefer to prepare my own at home. This version is very basic as a flavour, just a good example how easy it is to make!!

HOME MADE MUESLI 

50 g (1 dl) oat meal
50 g (1 dl) puffed spelt
2 tablespoons linen seeds
2 tablespoons sunflower seeds
2 tablespoons raisins

150 g natural yoghurt
2 teaspoons honey

(all ingredients biological)

In a deep plate mix together all the dry ingredients, pour in the yoghurt and sweeten with honey. Place in the fridge for about 15 minutes and enjoy with a cup of tea and sliced fresh fruits or berries.

Choco Crunch Bites



A recipe can't get easier than this one :) These are similar to rice chocolate squares but are made of whole wheat which gives you energy for longer time. 


CHOCO CRUNCH BITES

400 g puffed whole wheat
150 g milk chocolate
150 g dark chocolate
150 g crushed hazelnut chocolate
40 g (0,5 dl) sugar

Prepare a square baking tin covering it with oven paper.
In a medium bowl melt all the chocolates in a low heat little by little until the mixture is completely smooth, add the sugar and let it melt in the mixture. 
Put the puffed wheat in a bigger bowl and pour the chocolate melt on top and mix carefully. Pour the mix into the baking tin and place in the fridge for an hour or so. Cut into square bites and serve :)

Peach Raspberry Oatmeal Cake




Oatmeal has lately become one of my favourite things. For years I didn't eat it because it reminded me of some boring porridge at kindergarden. 
But now the taste of it feels nice and gives me comfort. 
So I put the idea in this cake, it is perfect for breakfast :)

PEACH RASPBERRY OATMEAL CAKE

Base:
2 eggs
45 g (0,5 dl) brown sugar
250 g (4 dl) oatmeal
2 teaspoons baking powder
2 teaspoons vanilla sugar
150 ml milk (soya or  normal)
3 medium peaches cut into little cubes

Topping:
200 g raspberry jam

+ icing sugar

Preheat the oven to 200 C.
Prepare a spring cake tin buttering it all over.
Cut the peaches into small cubes. 
In a bowl whisk the eggs with sugar, then add oatmeal, baking powder, vanilla sugar and milk. Last add the peach cubes and mix carefully. Pour the mix into the cake tin and spread raspberry jam all over the surface.
Place the tin in the oven and bake for 20-30 minutes.
Let the cake cool for a couple of minutes, spread some icing sugar on top and enjoy!!

Torta al Cocco & Ananas




This cake keeps the summer feeling going on.. 
It's still almost 30 degrees here, love :)

TORTA AL COCCO & ANANAS

170 g (2dl) brown sugar
3 eggs
2 teaspoons baking powder
1 teaspoon baking soda
130 g (2dl) white flour
125 g vanilla yoghurt
200 g small pineapple cubes

Topping:
300 g Coconut spread

If you are not able to find a ready coconut spread, you can make this simple cake frosting:
150 g cream cheese
50 butter
100 g coconut flakes
 2 teaspoons vanilla sugar
150 g icing sugar
Mix all the ingredients together in a bowl and use it as topping.

Preheat the oven to 175 C. 
Prepare a spring cake tin spreading some butter all over it.
In a bowl whisk eggs and brown sugar until the texture becomes very fluffy.
In another bowl mix together all the dry ingredients and add them in the first bowl together with vanilla yoghurt and pineapple cubes. Mix well and pour into the cake tin. Bake in the oven for 20-25 minutes. To make sure the cake is cooked, do a test with a toothpick. If it doesn't leave a mark, the cake is ready. Remove from the oven and let cool at least for a half an hour in a room temperature. Remove the collar of the tin and place the cake upside down on a serving plate. Spread the coconut spread all over the cake and place on the fridge for a while to cool some more. 
Serve and enjoy :)
